"How to Make Perfect Spring Rolls"
Spring rolls are an Asian treat that is famous across cultures. Packed with veggies, meat or seafood, wrapped in thin pastry and fried or served fresh, these rolls never fail to impress. Vietnamese style spring rolls, both fresh and fried, can be made with ease when you follow this guide.
Ingredients:
For the Filling:
1 cup shredded cabbage
½ cup grated carrots
½ cup bean sprouts
½ cup finely chopped mushrooms
½ cup cooked chicken, shrimp
2 cloves garlic
1 tablespoon soy sauce
1 teaspoon sesame oil
½ teaspoon salt
½ teaspoon black pepper
For Wrapping:
10-12 spring roll wrappers (homemade)
1 beaten egg or a flour-water paste (for sealing)
For Frying:
1 cup vegetable oil
For Serving:
Sweet chili sauce
Soy sauce or peanut dipping sauce
Step 1: Prepare the Filling
Put some oil in a pan and place it on medium heat, Heat the oil.
After a few seconds add the minced garlic on low heat till fragrant.
Continue to cook and add chopped cabbage, carrots, mushrooms and bean sprouts. Stirring well. In case you are using chicken, shrimp, or tofu, add them to the pan and mix well. Use soy sauce, sesame oil, salt, and black pepper for seasoning. Fry for 2 - 3 minutes until the vegetables get tender while still being a bit crunchy. Take the filling off of the heat and allow it to cool thoroughly.
Step 2: Prepare the Wrappers
If using frozen spring roll wrappers, melt at room temperature.
Remove one wrapper at a time and cover it with a damp cloth to avoid drying.
Step 3: Assembling Spring Rolls
Take a clean working surface and place a wrapper on it in a diamond shape (one corner facing you). Pour 1-2 tablespoons of filling on the lower part of the wrapper. Cover the filling with the bottom corner of the wrapper. Next, fold in the sides. While bringing the wrapper to the top, roll it while tightening the wrapper. Seal the edge with some beaten egg or flour-water paste. Repeat the above steps for the remaining wrappers.
Step 4: Frying Spring Rolls
Place vegetable oil in a deep pan and heat it too medium.
Once the oil is hot (about 350F or 175 C degrees), gently deep the spring rolls in the pan.
Do this in batches for 3-4 minutes and occasionally turn until golden brown. Take out from the pan and place on paper towels to dip.
Step 5: Serving the Spring Rolls
Arrange the spring rolls on a serving plate.
Serve hot with sweet chili sauce, soy sauce, or peanut dipping sauce.
