2-3 green chilies (finely chopped)
1 small onion (finely chopped)
1 small capsicum (finely chopped)
2 tbsp soy sauce
1 tbsp red chili sauce
1 tbsp tomato ketchup
1 tbsp vinegar
1 tsp black pepper powder
½ tsp salt
¼ cup water
1 tbsp corn flour mixed with 2 tbsp water (cornstarch slurry)
2 tbsp chopped spring onions (for garnish)
Step-by-Step Instructions
Step 1: Preparing the Crispy Cauliflower
Cook the Cauliflower: Put some salt in a pot with boiling water, then cook the cauliflower florets for five minutes. After draining, pat dry.
To make the batter, combine the Corn flour, all-purpose flour, salt, black pepper, red chili powder, and ginger-garlic paste in a bowl. To create a thick, smooth batter, gradually add water.
Heat oil in a deep pan and fry until crispy. Each cauliflower floret should be dipped in batter, thoroughly coated, and then fried until crispy and golden. Drain on paper towels after removing.
Step 2: Preparing the Manchurian Sauce
Cook the Vegetables: In a pan, heat two tablespoons of oil. Add the garlic, ginger, and chopped green chilies. Bake until fragrant, a few seconds.
Add Vegetables: Add the chopped capsicum and onions. Mix-fry for two to three minutes over high heat.
Add Sauces and Spices: Mix in tomato ketchup, vinegar, black pepper, sugar, salt, soy sauce, and red chili sauce. Mix thoroughly.
Add ¼ cup water to thicken the sauce. Mix in the corn flour slurry until the sauce thickens.
Step 3: Combining Everything
Add the fried cauliflower florets to the sauce and lightly mix to cover them evenly.
Garnish with chopped spring onions and serve hot.
Tips for the Perfect Gobi Manchurian
✅ Use the double-frying method to fry the cauliflower twice for added crispiness.
✅ Modify Spice Levels: Depending on your taste, add or subtract green chilies and chili sauce.
✅ For a gravy version, make the sauce with ½ cup water or vegetable broth and use cornstarch slurry to adjust the consistency.
✅ Serve Right Away: To preserve its crunch, Gobi Manchurian is best eaten hot and fresh.
