Mutton Biryani: A Royal Treat for Meat Lovers


Mutton Biryani is a royal dish that incorporates delicious basmati rice, soft mutton and a rich blend of spices. Every region of India has its own special way of preparing Mutton Biryani, a dish that is perfect for feasts and special occasions. This detailed guide will help you make this delicious dish at home, whether you like Hyderabadi Dum Biryani or Kolkata-style Biryani with a touch of sweetness.



Ingredients 

For Marinating the Mutton:

  • 500g mutton 

  • 1 cup thick curd

  • 1 tablespoon ginger-garlic paste

  • 1 teaspoon turmeric powder

  • 1 teaspoon red chili powder

  • 1 teaspoon coriander powder

  • 1 teaspoon garam masala

  • Salt to taste

  • Juice of 1 lemon

  • 2 tablespoons mustard or refined oil

For the Biryani Rice:


  • 2 cups basmati rice (soaked for 30 minutes)

  • 5-6 cups water

  • 2-3 green cardamoms

  • 1 bay leaf

  • 1-inch cinnamon stick

  • 3-4 cloves

  • 1 teaspoon salt

For Cooking Mutton:

  • 2 tablespoons ghee or oil

  • 2 large onions (chopped)

  • 2 tomatoes (chopped)

  • 1 teaspoon cumin seeds

  • 2-3 green chilies 

  • 1 teaspoon garam masala

  • 1 cup water

For Assembling the Biryani:

  • 1/2 cup milk 

  • 2 tablespoons fried onions

  • 2 tablespoons chopped coriander leaves

  • 2 tablespoons chopped mint leaves

  • 1 tablespoon ghee

Step-by-Step Cooking Guide:

Step 1: Marinating the Mutton

The mutton must be marinated in order to become tender and flavorful.

Mutton, curd, turmeric powder, red chili powder, coriander powder, garam masala, salt, lemon juice, and oil should all be combined in one big bowl.

Put it in the fridge to marinate for at least two hours, preferably overnight.

Step 2: Cooking the Rice

Boil the water in a large pot. Add the cardamoms, cloves, bay leaf, cinnamon stick, and salt. Add soaked and drained basmati rice and cook until it is 70% done. After draining, set the rice aside.


Step 3: Cooking the Mutton


Heat ghee or oil in a heavy-bottomed pan. Allow the cumin seeds to splutter after adding them. Roast the sliced onions until they turn golden brown. Add chopped tomatoes and green chilies and cook until tender.

Cook the marinated mutton over medium heat until it is browned and its juices are released. Cover, add 1 cup of water, and cook the mutton over low heat for 40 to 50 minutes, or until it is tender.


Step 4: Assembling the Biryani


Place half of the cooked rice on top of the mutton in a heavy-bottomed pot.

Add a few fried onions, coriander leaves, and mint leaves. Continue with the remaining rice. Pour milk with saffron over the top. For added richness and aroma, add ghee.

Step 5: Dum Cooking

To keep the steam contained, cover the pot tightly with a lid or wrap the pot's edges in dough sealant. Let the flavors meld by cooking on low heat for 20 to 25 minutes. Before opening the lid, switch off the heat and give it ten minutes to rest.


Serving Suggestions

Serve hot with spicy curry and raita (curd). Add more fried onions and fresh coriander leaves as garnish. Serve with a cool glass of lemon soda or buttermilk.
